紫薯刀切馒头

[size=3]             紫薯除了具有普通红薯的营养成分外,还富含硒元素和花青素。而花青素具有广泛的抗氧化活性,而人体疾病的产生与身体中的氧化反应相关,多吃具有抗氧化功能的食物对预防各种疾病都有好处。

              除了因为食疗价值高而获得众人的喜欢,还有很多人是被它那妖娆的紫色所吸引,甚至不能自拔,偶就是其中一个。只要它一上市,别的薯类根本就无法入眼。甚至以前超爱的南瓜也暂时被遗忘,做面食时通通用它来代替。今天就先上一个最简单的---------刀切紫薯馒头。

材料:紫薯一小个(约100克),面粉2碗,酵母1/2汤匙,白糖1汤匙[/size] [url=http://my.meishichina.com/javascript.:;][u][b][size=3][color=#009999]做法[/color][/size][/b][/u][/url][size=3]:1)紫薯连皮蒸熟后,趁热去皮后压成细泥。.[/size]
[size=3]          2)白糖留下1/5汤匙,其余倒进紫薯泥拌匀,


[size=3]          3)剩下的白糖放碗里,倒进3汤匙开水,把糖化开,等水凉至35度左右,把酵母倒[/size] [size=3]进水里化开.[/size]
[size=3]           4)取一大盆,把面粉倒入,薯泥倒进中间把酵母水淋在面粉上,然后把所有材料[/size][size=3] 用筷子拌匀.

[size=3]           5)把搅匀后的面粉揉到光滑不粘手的面团,然后收圆放盆里,盖上盖子或保鲜膜,[/size][size=3] 静置1小时,发酵完成.

[size=3]           6)洒上少许干面粉在发好的面团上,再次揉成不粘手的面团,分成3份.取其中一份[/size][size=3] 擀成方形,然后从一侧卷起,搓成棍状,再切成小块,做成馒头坯形.

[size=3]           7)桌上洒上干面粉,把切好的馒头坯放桌上,盖上保鲜膜,再醒15分钟.

            8)蒸格上铺上湿纱布或抹点油,把馒头坯放蒸格上,要注意留空隙.
[size=3]           9)锅里放冷水,把蒸格放锅里,合上锅盖,中火蒸13分钟,熄火后,再焖3-5分钟,才打[/size][size=3]开锅盖取出馒头

LZ 的面食做的真的是好啊, 我回家自己也做了几次,但是每次都是失败的, 感觉放了南瓜和紫薯这些面就和不成团 , 是不是还有什么地方要注意的啊?

备注:我是趁热和的面团 。

南瓜泥要放凉才掺到面里,太热会把酵母烫死,面就发不起来了,而且南瓜泥的水分较多,一定要减少水的分量。
